Cajun Salmon Patties


5 oz. canned skinless/boneless pink salmon, drained
1 heaping T. diced onion
1 large egg
1 T. mayo
1 tsp. dijon mustard
1/2 tsp. cajun seasoning
1/8 tsp. pepper
2 T. cornmeal
12 saltine crackers, crushed
veg. oil for frying
Combine everything but the oil in a bowl and mix well. Heat just enough oil to cover the bottom of your skillet over med. high heat. Drop some of the mixture by spoonfuls into the heated oil and lightly press into a patty shape. Fry for 2-3 minutes per side until nice and golden brown. Drain on paper towels. Makes 5-6 patties
