LOADED TUNA SALAD

Ingredients:
2 eggs
2 cans Albacore tuna in water, drained well
1 small whole carrot, peeled and diced small
2 Tbsp onion diced small
¼ bell pepper seeded and diced small
2 radishes, diced small
½ rib celery diced small
1 Tbsp white wine vinegar
1 Tbsp olive oil
1-2 Tbsp mayonnaise or salad dressing
1 tsp yellow mustard
S & P TT (to taste)

Directions:
Place eggs in a small saucepan with cold water to cover. Boil for 2 minutes and remove from heat, cover pot with lid. Allow eggs to sit for 12 minutes for (perfect boiled eggs). Meanwhile, prepare rest of ingredients and place in a medium sized bowl. Add vinegar and oil. Mix gently and season with S & P. After eggs are done, peel and cut into small pieces and add to the mix. Add mayo and mustard. Stir gently. Adjust seasoning per taste. Enjoy!
