Skinny Banana French Toast Crock Pot Casserole


INGREDIENTS:
2 whole eggs
2 egg whites
1 1/2 cups low fat or almond milk
2 tablespoons honey
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
9 slices whole grain bread
(I used honey wheat)

FILLING:
3 bananas diced
(3 cups of diced apples can be substituted)
2 tablespoons honey
1/2 teaspoon cinnamon
1/3 cup pecans/walnuts (Optional)

DIRECTIONS:
Add first 6 ingredients into med mixing bowl, whisk til combined.
Add all the filling ingredients into separate small bowl & stir to coat banana pieces
Cut bread in half diagonally to make triangles.
Lightly spray crock pot with cooking spray.
Lay one layer of bread  (6 triangles) on the bottom of a crockpot and  1/4 of filling. Repeat layers and filling util you have 3 layers. Add any leftover filling on top.

Pour egg mixture over bread and cook
2 hours on high or 4 on low, until bread has soaked up egg mixture.

Serves about 9 Each serving 2 triangles
245 calories & 7 grams of fat
If apples are used 225 calories & 5 grams of fat
